Vinificação
It results from the selection of the best grapes from selected fields of the oldest vineyards of the Eugénio de Almeida Foundation. The automatic selection of the grapes, made berry by berry, is extremely rigorous allowing only the best, in perfect health and maturation, follow its production process. After a light pellicular maceration in the press, a soft pressing is performed in order to obtain a high quality product. The alcoholic fermentation of these grape varieties is done separately and with natural yeasts so that the authenticity of this wine is the real expression of terroir, unique and exclusive. Fermentation takes place in stainless steel tanks and in French oak barrels, carefully selected by the winemakers, with a controlled temperature of 16ºC. All the processes are carried out by gravity, ensuring the total integrity of the grapes and their maximum quality.
